One of my favorite things about Fall is all the wonderful food and smells and falling leaves and crisp air and pumpkins…oh, did I mention… I LOVE THE FALL!!!  This Fall Spinach salad is right there at the top of the list.  With the perfect combination of sweet and earthy it’s sure to satisfy those Fall cravings.

This Fall salad is so versatile you can have it for a weekday lunch or to impress at dinner party.  It’s so elegant and festive you could even use it for your Thanksgiving table.

With only a few ingredients, it’s a simple yet wonderful addition to your regular rotation.

· Spinach

· Apples (I used a Gala apple for this recipe but use your favorite apple)

· Grilled Chicken (leave this out if you are using as a side dish or would like Vegan/Vegetarian)

· Feta cheese (or substitute with a Vegan cheese)

· Cranberry Healthy mix (with Sunflower seeds, Almonds, Walnuts, Peanuts). Try this mix from Amazon.

Since you can never have too many salad recipes, this one has all the fall flavors your family is sure to enjoy.  It’s easy to throw a salad together and even easier to make it suited to your taste.  Some interesting add-ons for this particular salad could be:

· Roasted Butternut Squash

· Roasted Sweet Potatoes

· Shaved Brussel Sprouts

· Cooked Bacon

· Thinly Sliced Red Onion

Fall Spinach Salad

Serving size: 1 personal salad (double or triple if entertaining)

Prep time: 10 minutes

Ingredients

Salad

  1.  2 cups of Spinach
  2. 1 medium sized Gala apple
  3. 4 ounces of cooked Chicken Breast
  4. 2 Tablespoons of Feta cheese
  5. ¼ cup of Cranberry Nut mix
  6. Salt & Pepper, to taste

Dressing (double or triple if making more than 1 serving)

  1.  ¼ cup of Extra Virgin Olive Oil
  2. 1 tablespoon Honey (Local, Raw Honey if you can find it)
  3. ¼ cup of Organic Apple Cider Vinegar
  4. 1 teaspoon of Spicy Mustard
  5. 1 teaspoon of Dijon Mustard
  6. Salt & Pepper, to taste

Directions

  1.  Mix of the Dressing ingredients in a sealable glass container.  Try these Mason Jars from Amazon.  They’re cheap, reusable and great for drinking glasses.
  2. Place rinsed Spinach in a large bowl.
  3. Next layer the thinly sliced Apple.
  4. Place the grilled Chicken on top of the Spinach and Apple.
  5. Sprinkle the Feta cheese on top.
  6. Layer the Cranberry and Nut mix on top of the Feta.
  7. Finally, drizzle the entire salad with 2 Tablespoons of the Dressing.
  8. Toss and Enjoy!!

Remember, you can add other ingredients to this Fall Spinach salad if you’d like.  Butternut Squash, Bacon and Red Onion are favorites in my house.
