“Zoodle your Noodles”

Who doesn’t love a delicious weeknight “pasta dish”? This recipe, Shrimp Scampi with Zoodles, is sure to please even the pickiest of eaters while at the same time being elegant enough to entertain. The dish is designed with Zucchini noodles but you could also replace the Zoodles with regular pasta noodles for a higher Carb content. Personally, I sometimes serve this dish with either Angel Hair or Linguini noodles.

Shrimp Scampi with Zoodles is a relatively easy dish to prepare. You only need a few ingredients and around 30 minutes to make this fantastic dinner! Be sure to make extra as you’ll be craving leftovers for lunch the next day!

Before we begin with Ingredients lists and instructions, you need a Spiralizer, such as this one from Amazon. You could also use a Mandolin, like this one from Amazon. Both are super easy to use but be very careful should you decide on the Mandolin. It’s very easy to cut yourself if you’re not paying attention!

Ingredients List

·  1 pound of cleaned, deveined Shrimp (I use the Domestic, frozen Shrimp)

·  1 pint (package) of Grape Tomatoes, halved

·  1 – 2 cups of Baby Spinach, rinsed and trimmed

·  4 medium to large sized Zucchini Squash

·  2 tablespoons of fresh Lemon Juice

·  2 cloves of Garlic, minced

·  ½ to 1 tablespoons of unsalted Butter

·  2 tablespoons of Extra Virgin Olive Oil, divided

·  ½ cup of dry, White Wine

·  1 cup of Low Sodium Chicken Broth

·  1 teaspoon of dried Oregano

·  Salt & Pepper, to taste

Once you have all the ingredients together, the first thing you’ll need to do is “Zoodle your Noodles” ! Using the Mandolin (or the Spiralizer), zoodle all 4 Zucchini so you have a nice, big bowl of Zoodle deliciousness! Here is a You Tube video on how to Zoodle using the Mandolin. Your Spiralizer should come with instructions for you to follow.

Next, heat a large saute pan on medium-high heat. Drizzle 1 tablespoon of Extra Virgin Olive Oil in the pan while heating. Once the EVOO is heated, place the shrimp in the pan being careful not to over-crowd (do this in stages if you need). Sprinkle Salt, Pepper and 1/2 teaspoon of dried Oregano on the side of the shrimp facing up. Cook for 2-3 minutes on each side. Once cooked through, remove Shrimp from the pan, set aside and cover.

Next, you’re going to put the 1/2 tablespoon unsalted Butter in the pan along with the other tablespoon of Evoo. Once heated, add in the Garlic and let cook for 1 minute or until fragrant. Be careful not to let the Garlic burn. Once the Garlic is fragrant, add in the 1/2 cup of White Wine and de-glaze the pan (aka scrape the bits). At this point , I like to add in some unsalted Chicken broth so I have more sauce. If you prefer not cooking with the white wine, you could use all Chicken broth and omit the wine altogether.

After the sauce cooks down a bit, add in the halved Grape tomatoes along with another sprinkle of Salt & Pepper and Oregano. Allow the tomatoes to cook long enough so they start to burst. Once the tomatoes are heated through, add in the Zoodles and cook for 2-3 minutes. You could add in a bit of Chicken broth here to make more sauce if you’d like. At this point, if you’d like a spicier Shrimp Scampi with Zoodles, you could add in a sprinkle of Red Pepper flakes (I always do).

Next, add in the Spinach and cook for 1-2 minutes allowing the Spinach to wilt down. It’s incredible how you could have so much raw Spinach but it turns into such a tiny bit of cooked Spinach. It always amazes me! Hehe

Finally, you’re going to add the Shrimp back to the pan and heat for just around a minute. Drizzle everything in the pan with the freshly squeezed lemon juice and there you go!! Delicious and wonderful Shrimp Scampi with Zoodles!!

To plate this dish, I like to use large pasta bowls since the high sides of the bowl help to keep everything where it should be. I’m a bit of a messy eater so every little bit helps! Hehe. Once each dish is filled, top with freshly grated Parmesan cheese, some extra Red Pepper flakes and/or another squeeze of Lemon juice.

Serving Size: 3 – 4 servings

Time (Prep and cook): around 30 minutes

Ingredients

1 pound of cleaned, deveined Shrimp (I use the Domestic, frozen Shrimp)

4 medium to large sized Zucchini Squash

1 cup of Low Sodium Chicken Broth

1 teaspoon of dried Oregano

Red Pepper flakes, to taste

Freshly grated Parmesan cheese (to finish)

Directions

  1. Zoodle your Noodles! Using the Spiralizer or Mandolin, zoodle all 4 Zucchini and place in a bowl.
  2. Heat 1 tablespoon EVOO in a large saute pan.
  3. Place Shrimp in heated pan being careful not to over-crowd. Season Shrimp with Salt, Pepper and dried Oregano. Cook Shrimp for 2-3 minutes on each side or until heated through. Remove Shrimp from pan, set aside and cover.
  4. Heat 1/2 tablespoon of butter and remaining 1 tablespoon of EVOO in the pan. Add in the minced Garlic and cook until fragrant, about 1 minute.
  5. Once the Garlic is fragrant, add the White wine and/or Chicken broth and de-glaze your pan. Allow the sauce to reduce a bit (3-5 minutes).
  6. Add the Grape tomatoes to the pan and cook long enough to allow them to burst. Season with Salt, Pepper and remaining Oregano.
  7. Add in the Zoodles and allow to cook for 2-3 minutes. Next, add in the Spinach and allow the Spinach to wilt down (1-2 minutes).
  8. Add your Shrimp back to the pan and allow to re-heat for 1 minute. Remove from heat and sprinkle with the freshly squeezed Lemon juice.
  9. After plating, top with some freshly grated Parmesan cheese, Red Pepper flakes and/or more Lemon Juice.

Shrimp Scampi with Zoodles is perfect for a weeknight dinner but also elegant enough that you could entertain with at a dinner party. If you aren’t Low Carb or Gluten free, you could replace the Zoodles with regular/whole wheat pasta or a lower Carb option such as Banza or Chickpea pasta. Whichever direction you take your “noodles”, I’m sure you and your entire family will love this Shrimp Scampi with Zoodles!
